Sulfites cause all types of symptoms that you may have especially when you drink red wine. Red wine is extremely high in sulfites!
So what happens biochemically?
Sulfites have to be transformed into sulfate and as sulfite is transformed, it can be excreted(peed out).

How does it transform?
There’s an enzyme called sulfite oxydase(SUOX). It uses a mineral called molybdenum. Molybdenum supports the enzyme to get rid of the sulfites. So if you drink red wine, you get headaches, and you’re prescribed molybdenum then it will eliminate Sulfites.

Sulfites destroy thiamine(B1).
The more sulfites you drink, the less B1 you’ll get. Symptoms of neurological disorders and fatigue will occur. B1 is needed in hundreds of enzymatic reactions so if its deficient there will many other conditions.
